Chicken Marinade
- 500 g Chicken thigh, skinless & boneless excess fat trimmed, note 1
- 1/3 cup Greek yoghurt or Hung Curd
- 1 tsp Turmeric powder
- 1 tsp Coriander powder
- 1 tsp Cumin powder
- 1 tsp Garam Masala sub curry powder
- 1 tsp Dried Fenugreek leaves (Kasoori Methi) Optional, reccomended
- 1 tsp each Salt & Pepper
- 1 tbs Minced Ginger and Garlic about 10g each fresh, or from a jar
Butter Chicken Curry Sauce
- 2 tbs Clarified Butter sub regular butter or cooking oil of choice
- 1 inch Cinnamon stick
- 1 Star Anise
- 4 Green Cardamom
- 4 Cloves
- 1 tbs Cumin Seeds (Jeera)
- 2 Fresh Tomatoes medium sized
- 1 tbs Minced Ginger and Garlic about 10g each fresh, or from a jar
- 400 g Crushed Tomatoes (tinned) 14 oz
- 1/3 cup Cashews
- 1 Tbs Sugar optional, for sweetness and to balance spices
- Salt and Pepper to taste
- 1/2 cup Heavy Cream 115ml
Note 1: Nobody enjoys having to dig their fingers in their mouthful of half-chewed food to pull out stringy bits of gooey fat. Trim any excess fat and sinue from the chicken thighs to avoid this uncomfortable situation!! It only takes a couple of extra minutes and the result is incredible, juicy, tender and flavourful chicken that you can eat with confidence!!
