So, as we all know, I live in a fussy household!! Whilst I absolutely LOVE my oysters fresh with as much lemon juice as I could possibly squeeze on to them without overflowing, my partner and father in law are not-so-much big fans of natural oysters. If it’s not prepared Kilpatrick style, they simply will not eat it! And I’m not going to lie, when I fist had this dish prepared by my partner, it was a little bit funky for me. Perhaps it was the preparation or the bacon, but something wasn’t doing it for me. That’s until I made the recipe for myself of course. I used literally (what I think is) the best bacon money can buy (in Australia at least, haha) – which is the British Sausage Co streaky bacon. Here I am digressing again!! WHY will I love this recipe you ask? Well if you’re anything like my fussy family, and you hate natural oysters, this is absolutely the recipe for you! The texture of the oysters changes into something more palatable (or so the fussy one’s say), and the delicious Kilpatrick sauce complemented by the salty delicious crispy bacon just creates something that dreams are made of. What You’ll Need:

For the Oysters:

  • 24 Freshly Shucked Oysters: These should smell like the ocean—avoid any that have a stinky or fishy odor.
  • 175g Streaky Bacon (or Middle Bacon): Choose rindless cuts for the best results. Avoid back bacon or short-cut bacon, as they tend to dry out due to the lack of fat.

For the Kilpatrick Sauce:

  • ½ Cup Ketchup: The perfect base for that sweet and tangy flavor.
  • 3 Tablespoons Worcestershire Sauce: Adds a rich savoury depth that caramelises beautifully with the ketchup.
  • 1 Teaspoon Sriracha or Tabasco (optional): Bring a touch of heat with Sriracha for a twist, or go traditional with Tabasco. I personally prefer sriracha for flavour and heat, Tobasco for me is more of a vinegar / acid rather than actual heat / spice.

Optional Garnish:

  • Lemon or lime wedges
  • Rock salt for presentation (if you’re feeling boujie!)
  • Spring onion or chives

Method

  1. Prepare the Bacon:
    Finely slice the bacon into thin strips. Using a sharp knife is crucial, especially with raw smoked streaky bacon like The British Sausage Co.’s.
  2. Mix the Sauce:
    In a small bowl, combine ketchup, Worcestershire sauce, and your chosen hot sauce, if using. Adjust to taste if you prefer it spicier.
  3. Assemble the Oysters:
    • Place the oysters on a baking tray, using small pieces of foil to stabilize any that tip over.
    • Spoon a small amount of Kilpatrick sauce onto each oyster.
    • Top with shredded bacon, then drizzle a little more sauce on top for extra flavor.
  4. Grill:
    Preheat your grill and cook the oysters on high for 4–5 minutes, or until the bacon becomes crispy and golden.
  5. Serve:

Ingredients
  

  • 2 doz Oysters freshly shucked (24 oysters)
  • 1/2 cup Ketchup
  • 3 Tbs Worcestershire sauce
  • 1 tsp Sriracha or Tabasco optional for heat
  • 175 g Straky Bacon finely sliced (or middle bacon, note 1)

Instructions
 

  • Preheat your oven grill to medium-high heat, and prepare a baking tray with aluminium foil to prop up the oysters so that they are not leaning over to one side or sinking forward.
  • In the meantime, whisk together sauce ingredients and set aside.
  • Top oysters with finely shredded bacon, and evenly distribute sauce over the the bacon-covered oysters. (note 2)
  • Grill for approximately 10-15 minutes, or until bacon is crisp to your liking.
  • Serve and enjoy!

A sweet, savoury, tangy sauce that’s caramelised and sticky with delicious crispy bacon and sensational fresh oysters. 2 doz Oysters, Fresh (24 oysters) 175g streaky bacon** (6.173oz) 1/4 cup ketchup 1/4 cup barbecue sauce 3 tbs Worcestershire sauce Sriracha or tobacco to taste Method: Combine sauce ingredients and set aside. Finely slice bacon into thin strips, and get your grill on piping hot (I set mine to about 225°C/437°F). Top oysters with a teaspoon dollop of the sauce, followed by some bacon and any remaining sauce. Grill until bacon gets nice and crispy and oysters are cooked through. Notes

Note 1: Avoid using short-cut or back bacon, as they will easily become dry due to the lack of fat. Aussie's LOVE shortcut bacon, however streaky / middle bacon is better suited for this recipe. 
Note 2: In the video I did sauce first, then bacon, then any remaining sauce - either method is fine but I actually prefer the sauce over the bacon! It goes super sticky and caramelised.
